Picked up some baby back ribs to try and cook on my weber charcoal tomorrow. I've mostly stuck with basic burgers brats and chicken thus far, but I figure with spring finally in season I'll try my hand at something a bit more adventurous! Any tips for someone who's brand new to grilling? I'm a bit concerned about how to maintain the temperature over a long period of time, should I try to just light a few briquettes and let them catch the rest? I've heard of the snake method; is that something I'd use with ribs?
My wife has already told me that pizza hut is on speed dial for when I mess this up, so I'm really wanting to do these right!
