Hey guys, my apartment let's us have grills on our balcony (both gas and charcoal are allowed) and I'm wondering what your recommendations would be for a simple set up? I'm not cooking for large groups or anything like that, it would just be for me (I do the whole /r/MealPrepSunday thing and keep thinking how much better things would taste grilled).
Most of my experience grilling is using my parent's Webber kettle. They have a proper house, though, so it was always easy to just start the chimney on the driveway and roll the grill back into the garage when we were done.
Do I have to use a chimney to start charcoal? I don't even have newspaper at my apartment...and it seems annoying to have to have a seperate thing in my limited space.
Would gas be a simpler set up? I've used them before and they seemed faster to get going, but every gas grill I've used has also fallen apart (granted these were in college housing so they were probably cheap). Lots of problems with them not lighting properly or the hoses rotting away and stuff like that. They also seem like they take up a lot more space, though I'm guessing that's probably because I'm used to seeing the giant gas grills everybody in the Midwest has.
I'm also wondering how things last year round outside? I'm in Chicago, so we get lots of rain, snow, etc and I'm concerned about rusting.
