Hey everyone and Happy Saturday! Today will probably be or if the last few weekends to smoke something before the rain hits, so I have some hot links to grill and chicken thighs to smoke.
I’ve done thighs a few times, and both times I did them at 225-250 with mediocre results. I recently purchased a new thermometer for better results, but I’m reading anywhere between 200-250 for thighs work best, but 50 degrees is quite the difference.
Chicken doesn’t benefit from low and slow, and I can certainly finish crisping the skin up in the oven, but can anyone tell me the best temp simply to get the meat to 160ish? Thank you!
