I like to reverse sear, but my direct heat zone is never hot enough for the sear that I want. The only way I have found success is to use my chimney starter to sear (learned it from amazingribs.com) , but it feels like a waste of charcoal to start a chimney for a sear. Fairly new to charcoal grilling, really need some tips!! Thanks!!
