Outdoor Kitchen Build

I appologize of this is the wrong forum, I am not the best at navigating on mobile.

I am building an outdoor kitchen with a granite counter top. Normally granite sits on plywood for installation, but my understanding is that you do not want wood next to the grill. What is supposed to go under the granite near the grill area?

The rest of the build is metal and concrete block. One vent will be under the grill to the outside and the grill is totally blocked in on either side to prevent heat into the sink and fridge area around the corner of the L shape.
