ELI5: How does dry aged steak stay safe to eat?


How does the meat not spoil being exposed to air so long, and not being frozen?My other question. I bought some skirt steak over the weekend that is cut in store and just wrapped, but not air sealed or anything like that. The sale by date was the 26th and I cooked it last night. It was turning brown which I know happens from air exposure. A couple parts seemed dried out and brown. It smelled fine. Is is safe to go ahead and eat? via /r/steak https://ift.tt/2N0Ezzm
