Wanting to reverse sear for the first time


I’ve read a lot of how-to’s, but one thing I am still wondering is do I need to let the steaks rest after taking them out of the oven before searing or is it better to sear as soon as the cast iron is hot once I take them out of the oven?Wanting to make two NY strips in a few days. via /r/steak https://ift.tt/2RoEZP1
