I definitely leveled up tonight [1lb choice NY strip, medium rare, cast iron]

Getting the hang of this. I grabbed up some tri-tip for $6.50/lb at Costco. I cooked it sous-vide for 1hr @ 129°F and finished in the skillet for two minutes per side. Yum.

Finished wings, split the sauce, and whipped together a ranch dip. Left is HEB flyin saucy, right is franks buffalo.

Allen Brothers 28 day dry aged bone in prime rib cooked for 7 hours at 170, rested and re seasoned then finished at 550 for ten minutes.

Pork filet on slewers wrapped with bacon. Grilled with direct heat and glazed with a chilli sauce. 😜

1st time ever cooking Venison steaks. Cast iron skillet, 3 minutes each side on high, then let rest in foil with butter and garlic for 10 minutes.

Our Costco in NW Houston always has beautiful Prime grade ribeye cap rolls. Couldn’t resist the temptation and cooked one up for lunch. Best part of the cow IMO.
