Outback Steakhouse: Steak Experience and Questions

Had gift cards for Outback so decided to have someone else cook me a nice steak.I usually get the 6oz sirloin, medium rare, and it does me just fine and is pretty cheap. I’ve ordered this several times and always enjoyed the meal. This time, I ordered the 10oz ribeye, medium rare. I think it costs about $22.I wasn’t really impressed. It was unevenly cooked, as the outer 1/3 was quite medium and the inner parts where the fat lives were quite rare. It was also fairly grisly, which I hate. There were some tasty bits with fat towards one edge and in the center, but overall I felt like the sirloin is a better cut with no gristle at all.Iwas wondering if this is normal for ribeye (grisly and uneven cooking)?Or did I just get a really shit steak from Outback?Any recommendations?I had considered getting the Prime Rib also, but haven’t never had prime rib before. I don’t think I’ve had ribeye before this. Cuts I do enjoy are filet mignon, New York strip, and the sirloin like I mentioned above. As I mentioned, I really don’t like getting a bite of gristle when I’m eating.I will say, I prefer Texas Roadhouse but Outback is really the only steakhouse close to where I live :( via /r/steak http://bit.ly/2ThJoUl
