My first attempt at Sous Vide too! Cheap bottom round cut, 136 for about 4 hours before searing. Turned out great for the cut.

I kept reading good things about the mayo sear, so I thought I'd try it. Boneless chuck short rib strips cooked for two hours sous vide @ 130°F, and then mayo seared in the cast iron skillet for two minutes per side with an assist from my searing torch. Humans don't deserve such deliciousness.

The better half is away so I thought I'd have a little me time. Rib-eye left to come up to room temp in soy sauce and finished with English mustard.

Today was a good day.

Second sous vide attempt. I have some work to do with the sear, but this was the best steak I’ve ever had.

Propane tank corrosion?

Bought dry aged steak. Sous vide 130 for 2 hours then seared. Something wrong here??
